people change. As you learn to improve your thinking, you become more open

Inflammation: In Sickness & In Health
taught by Hilary Kass, Merc Nutrition Educator
Inflammation is the body's
normal healing response to injury. Due tocommon problems in diet and
lifestyle a body can be in a chronic inflammatory response increasing the
risk for disease, including heart disease, high blood pressure, diabetes,
and cancer. This class will explain the process of normal and chronic
inflammatory response and the dietary and lifestyle factors that can reduce
excessive inflammation. You will learn practical ways to reduce inflammation
by incorporating healthy fats and fiber into your daily diet. And you will
receive a sample menu that shows how you can eat a simple healthy diet that
supports health. A healthy snack will be served. $12 per person, $10 for
co-op members and seniors.

Tofu Basics One
taught by Nancy O'Connor, Merc Director of Nutrition Education
In this beginner tofu cooking class we will demystify tofu by providing basic
handling and cooking information that will help you succeed with soy.
We'll prepare Simple Pan Fried Tofu, Tofu Sandwich Spread, Marinated Tofu &
Rice Salad, Tofu Peasant Pie, and Barbecued Tofu. Each class participant
will receive a complimentary pound of locally made Central Soyfoods tofu to
take home that you can use to create a tofu success! $15 per person, $13 for
co-op members & seniors.

The Art of the American Cookie
taught by Mari Ruck
Come learn the techniques that are crucial to making perfect cookies every
time you bake. Mari will discuss ingredients that really make a difference.
Then start your engines with a cup of coffee and prepare to sample
Irregardless Chocolate Chip Cookies, Old Fashioned Oatmeal Ginger Chip, Mrs.
G's Peanut Butter blossom, and Delicious Kasha Cookies. Wow! Don't miss this
very yummy and fun class. $15 per person, $13 for co-op members and seniors.

Fish Cooking Basics
taught by Chef Paige Vandegrift
If you'd like to include more heart healthy fish in your diet come to
this class with Chef Paige where you'll build your knowledge, skills and
confidence. Paige will prepare (and you'll sample) Salmon Baked with
Herb-Anchovy Butter; Bass in Parchment with Tomatoes, Olive & Orange;
Grilled Prosciutto-wrapped Scallops with Rosemary; Halibut Poached with
Fennel; and Trout with Browned Butter and Almonds. Wow! Don't wait to

With all the contradictory information out there, how can a woman decide
what is right for her? Come join Karen Roberts, Board Certified Nurse
Practitioner, for a discussion of symptoms of menopause, various management
options, and the latest research and treatments. She will cover both natural
and pharmaceutical options for symptom management, and conduct a needs
assessment for future women's health topics. Bring a fan and a sweater! $12
