Your Excellent Life - Part 1: Embracing Change

In this series, you'll acquire the basic tools to help you create and live
an excellent life. Come to any or all of the classes offered this spring.
Are you ready for change but unsure you can handle it? This class will
introduce you to dynamic concepts that have proven effective in helping
people change. As you learn to improve your thinking, you become more open
to possibilities and more capable of acting on them. These strategies will
help you move from weakness to strength in your thinking and behavior; from
fear to courage and hope. Class is interactive and includes relaxing guided
imagery. $12 per person, $10 for co-op members & seniors.

Women And Fatigue
taught by Karen Roberts
Join Karen Roberts, local board-certified Nurse Practitioner, for a
round-table discussion of fatigue. She'll review medical conditions that
cause fatigue, discuss sleep and strategies for preventing or combating
fatigue. She will present a unique creativity-based framework for dealing
with the emotional aspects of fatigue and releasing new energy. $12 per
person, $10 for co-op members & seniors.

After The Holiday Diet Clean Up
taught by Hilary Kass, Nutrition Educator
Now that you have cleaned up all the decorations and leftovers, it's time to
clean up your diet. It feels so good to simplify what you eat. Learn some
practical daily eating skills to get back on track including SMART
(Specific, Measurable, Active, Realistic and Time-bound) goal setting. We'll
sample several healthy soothing recipes with Yogi Tea, Miso Soup and
Gingered Carrots with Steamed Greens. Make this a New Year's gift you give
to yourself. $15 per person, $13 for co-op members & seniors.

Warming Winter Soups
taught by Chef Paige Vandegrift
It may be cold outside, but it's warm inside when you have a pot of homemade
soup simmering on the stove. Let Chef Paige give you some new ideas for
putting together hot, nourishing, delicious soups. In this class Paige will
prepare and sample Tomato Fennel Soup with Parmesan Croutons; Cream of Wild
Rice Soup with Vegetables and Country Ham; Cauliflower Vichyssoise with
Roquefort and Walnut Toast; Garbure - a traditional hearty stew from the
Basque region of France - made with cabbage, chicken , white beans and
potatoes. $18 per person, $15 for co-op members & seniors.

Whole Grain Bread Baking Basics
taught by Nancy O'Connor, Nutrition Educator
We'll start with a bowl of Marvelous Minestrone Soup accompanied by a slice
of homemade Anadama bread (delicious whole wheat yeasted bread made with
cornmeal and molasses). We'll talk about ingredients and techniques used in
baking yeasted breads. Participants will see several doughs in various
stages of development, including making a sponge and kneading. We'll sample
Cinnamon Rolls made with Whole Wheat Featherpuff Dough, and also enjoy a
delicious Milk & Honey Quick Bread. $15 per person, $13 for co-op members &
seniors.
