Taking a class from Anju is like sitting in the kitchen of a good friend. Anju will entertain you as she cooks Chole savory garbanzo beans, Palak Paneer spinach with fresh homemade cheese, Raita yogurt and vegetables and delicious Chappatis hot, freshly made Indian flat bread. Herbal Remedies For Colds & Flu

Herbs are an excellent choice for dealing with the viruses that cause colds and flu. Safer than over-the-counter medications, herbs can prevent colds and flu, as well as hasten recovery if you neglected the prevention measures. When properly used, herbs can keep you healthy all winter. This beginners level class will teach you how to stay well. $12 per person, $10 for co-op members & seniors.

Spanish Tapas - Delicious Little Bites

We're headed off to Spain with Chef Paige to enjoy an evening of wonderful little dishes. When you put together a collection of these small appetizers you have a delicious meal, best shared with a group of friends and Spanish wine. Paige will prepare and you'll sample Garlicky Shrimp, Meatballs in Saffron Sauce, Tortilla Espanola potato omelet, Romesco Sauce Catalan pepper sauce. We expect a crowd! $18 per person, $15 for co-op members & seniors.

Your Excellent Life - Part 2: Empowering Thoughts

In this series, you'll acquire the basic tools to help you create and live an excellent life. Come to any or all of the classes offered this spring. You've probably noticed how negative, doubting and fearful thoughts often interfere with your efforts to change. The good news: you can diminish the influence of negative thoughts as you develop more effective, empowering thinking habits! In this dynamic and informative class, you'll learn strategies to help you improve your thinking and behavior. The class will be interactive, with written exercises, discussion and guided imagery. $12 per person, $10 for co-op members & seniors.

Stew The Winter Away
taught by Chef John Thompson
Join us for a fun and hearty evening with Chef John as he demonstrates stewing techniques for beef, bison and pork. John will warm you up with Tall Grass Bison Stew, Braised Pork Shoulder and Simmered Beef Short Ribs, all accompanied by homemade Down Home Cornbread. If we're lucky, John will entertain us with his accordion playing at the end of class. $23 per person, $20 for co-op members & seniors.

Tempting Vegetarian Delights With Bengali

Did you know that chhana - fresh Bengali cottage cheese - is so easy to make at home, and you can make a host of delicious dishes with it? Come and join Debjani as she demonstrates easy-to-cook gourmet chhana recipes including chanar-kabab - an appetizer; chanar-luchi - puffed breads stuffed with chhana; shaag-paneer - chhana cubes in mouthwatering spinach gravy; chhanar-dalna - a traditional Bengali preparation made with chhana, potato, and green peas; and baked-sondesh - a dessert. Savor these dishes with fresh Moshla-Cha (Spiced Chai). $15 per person, $13 for co-op members & seniors.

Chicken Cooking Basics
taught by Chef Paige Vandegrift
Here is a class we've had lots of requests for - a class for people who like to eat chicken but are in a preparation rut. Chef Paige will walk us through the basics of chicken cooking including how to butcher a whole chicken and appropriate cooking methods for various parts. Paige will prepare recipes that showcase roasting, baking, braising and pan-frying. She'll also demonstrate how to make delicious and versatile chicken stock. Great recipes, excellent tasting as usual. Don't wait to sign up - we expect this class to fill in a blink! $23 per person. $20 for co-op members & seniors.

Heart disease is the #1 cause of death for women. Join Karen Roberts, local board-certified Nurse Practitioner, for an overview of heart health during February, Heart Month. She'll review heart disease processes, risk factors and risk reduction, screening tests, and you can do to keep your heart healthy. $12 per person, $10 for co-op members & seniors.

Wheat-Free / Gluten-Free Shopping At The Merc
taught by Hilary Kass, Nutrition Educator
Take a walking tour down The Merc aisles as we read labels and discover the wide variety of wheat and gluten free foods. We'll explore books, magazines and other resources and then settle into the Community Room to sample a few products. This informational class is a good first step for someone who is reducing or eliminating wheat and gluten foods. $12 per person, $10 for co-op members & seniors.

Saturday, February 25, 2-4pm
Indian Flat Breads
taught by Ravi Phull
Join us for this hands-on class and learn to make delicious Indian flat breads. We'll make simple Naan; Stuffed Parathas - flat bread filled with vegetables; Rotlis - unleavened bread made with oil; Spinach Purees - fried puffy bread; and Onion Roti - flat bread with onion in the dough. $15 per person, $13 for co-op members & seniors.

Tofu Basics
taught by Nancy O'Connor, Nutrition Educator
In this beginner tofu cooking class we will demystify tofu by providing basic handling and cooking information that will help you succeed with soy. We'll prepare Simple Pan Fried Tofu, Tofu Sandwich Spread, Marinated Tofu & Rice Salad, Tofu Peasant Pie, and Barbecued Tofu. Each class participant will receive a complimentary pound of locally made Central Soyfoods tofu to take home that you can use to create a tofu success! $15 per person, $13 for co-op members & seniors.
