We'll talk about menopausal symptoms including hot flashes, insomnia, palpations, low libido, memory loss, and osteoporosis and what these symptoms tell you about what is going on in your body. We'll spend time on naturopathic approaches to menopause. Diet, lifestyle, botanical approaches, nutritional supplements, acupuncture, and even hormone replacement will be covered. Nancy will demonstrate and you'll get to sample: Vietnamese Shrimp Spring Rolls with Spicy Peanut Sauce; Crab and Avocado California Rolls with Wasabi and Ginger; and Thai Chicken Salad Lettuce Wraps with Sweet Chili-Garlic Sauce. Learn the basics, then you can vary and adjust to the season and the ingredients you have on hand.

Enjoy Lonesome Hut Lentil Soup; Mexican Bean and Pasta Bake; Savory Potato Onion Pie; Red Quinoa Salad; Simple Beans and Rice; and for dessert Maple Carrot Cake. We'll look at a cost per serving for each dish. You can afford to eat this well.

Teens Cook Vegetarian in The Merc Kitchen

More and more teens are choosing to eat a vegetarian diet. This hands-on class will allow young people ages 12 to 18 to learn the basics of a healthy vegetarian diet as they prepare a balanced breakfast, lunch and dinner, and a few snacks. Participants will receive handouts with recipes and resources for ongoing education. Class size is limited to 16.

Chicken Cooking Basics

Here is a class we've had lots of requests to repeat - a class for people who like to eat chicken but are in a preparation rut. Chef Paige will walk us through the basics of chicken cooking including how to butcher a whole chicken and appropriate cooking methods for various parts. Paige will prepare recipes that showcase roasting, baking, braising and pan-frying. She'll also demonstrate how to make delicious and versatile chicken stock. Great recipes, excellent tasting as usual. Don't wait to sign up - we expect this class to fill in a blink!

BOOK & COOK: Real Vegetarian Thai

Join us for a stimulating and delicious evening at our first Book & Cook Class. After you register for class we'll get you a copy of the cookbook "Real Vegetarian Thai" that Nancy will be using in class. Try some recipes at home, then bring your cookbook to class where Nancy will lead a book discussion and also a cooking class with recipes from the book. Chef Nancy will treat you to a feast of Two-Potato Curry Pot Stickers with Dipping Sauce; Kao Yum Rice Salad, Southern Style; Son-In-Law Eggs; and Mee Ga-ti (Rice Noodles w/ Coconut Bean Sauce). A new cookbook + great food + Chef Nancy = a perfect evening!

Join us for a lovely evening out - a combination of cooking class and a full three-course meal. Our evening will start with a one hour cooking demonstration taught by Chef Paige Vandegrift. Then sit back and enjoy three wonderful courses prepared by Paige. You'll have the recipes to take home, and a chance to visit with Paige while you dine. You are invited to bring a bottle of wine if you'd like. Our menu includes: Salad of Spring Vegetables with a Tarragon Vinaigrette served with locally made breads; Crispy Pan-seared Salmon with Bacon, Creamed Leeks & Wild Mushrooms; and a fabulous dessert of Lemon Cake with Fresh Berry Compote served with tea and coffee. Limited to 16.

Whole Grain Baking for the Whole Family

Learn the basics of measuring, mixing, and kneading to create a variety of healthy goodies. Together we'll make Hearty Whole Wheat Pancakes, Fruit Crisp, Oat Bars and Pizza Dough. We'll sample as we go and then sit down to a slice of homemade pizza. Bring your own apron and roll up your sleeves.
