Start with the freshest seasonal produce, add the cuisine of Italy, and have Chef Paige stir it all up - you've got a delicious evening at The Merc.
Paige will prepare a feast for us starting with Minestra Verdissima (A Very Green Soup). Then on to a savory Asparagus Risotto with Shiitake Mushrooms; Artichoke & White Bean Salad; Penne with Morels, Spring Onions & Asparagus; and Tagliatelle with Peas, Mascarpone & Prosciutto. We've come to expect the very best from Paige, and we always get it!

Middle Eastern Mezze - Little Dishes

Here is a menu, and a way of eating, that is beloved all over the Mediterranean world. These 'little dishes' can be appetizers before the meal or they can BE the meal. Our menu is delicious and healthful, and can be put together in a way that is simple or complicated - you decide. Our menu for the evening includes: Dolmas (grape leaves stuffed with lamb & pine nuts); Labna (thick drained yogurt dip with olive oil & mint); Falafel with tahini sauce; Spanakopita (filo pastry with spinach & feta); and Moroccan eggplant salad. Wow!

Effective Risk Taking

Effective risk-taking is essential to creating a rewarding life. Too often we hold ourselves back due to fear, and stay stuck in uncomfortable ruts instead of reaching for our dreams. In this class we'll explore the elements and consequences of risk, and learn how to deal with the anxiety that comes with initiating change. By demystifying the process of stepping outside our comfort zone, we gain confidence to take risks that are necessary to our growth and happiness. The class will include interactive discussion and a guided imagery exercise.

Tofu Basics 1

In this beginner tofu cooking class we will demystify tofu by providing basic handling and cooking information that will help you succeed with soy.
We'll prepare Simple Pan Fried Tofu, Tofu Sandwich Spread, Marinated Tofu & Rice Salad, Tofu Peasant Pie, and Barbecued Tofu. Each class participant will receive a complimentary pound of locally made Central Soyfoods tofu to take home.

Spring Fruit Desserts

When Paige applies her culinary talents to baking, the results are off the charts wonderful. Each dessert in this class will highlight fruit - in creamy, crunchy, cold, and delicious ways. The variety of desserts will
include: Rhubarb Upside Down Cake; Key Lime Tart; Lemon Pudding Cake; Fresh Strawberry Ice Cream; and Apricot, Cherry & Almond Crisp. We'll be waiting for you with the tea and coffee on.
