The Farmers Market is overflowing with beautiful, fresh produce from our area farms. Let Paige show you how to transform gorgeous eggplant and tasty tomatoes into a feast. Paige will prepare Mediterranean Eggplant and Barley Salad; Pasta with Eggplant, Peppers and Tomatoes; a Provencal Vegetable Tart with Herbed Goat Cheese; and Roasted Stuffed Zucchini. Join us for this celebration of local produce and we'll give you a special gift of a $5 Lawrence Farmers Market token!

Anyone can be creative, and it's essential to a rich life to continually cultivate creativity. Besides, it keeps life interesting and playful! From studying creativity and creative people for the past fifteen years, I've come up with some surefire tools to help you understand, initiate, and stay with your creative process. It's not about being famous or making money, it's about expressing your unique, soulful self, in a way that only YOU can, for your own growth and happiness. Artists and non-artists alike will benefit from this class, with its interactive discussion and guided imagery.

A New Twist on Stuffing Indian Style

We welcome back longtime Merc cooking instructor and friend Anju Mishra who will give us new and creative ways to stuff all those late season veggies. Anju will prepare Curried Stuffed Tomatoes; Yummy Zucchini (stuffed with textured soy protein and spices); Bell Peppers stuffed with Paneer (mild fresh cheese); and for a real treat - Aloo Parantha (homemade flatbread bread stuffed with potatoes). Come hungry, you're about to get stuffed!

Take a walking tour down The Merc aisles as we read labels and discover the wide variety of wheat and gluten free foods. We'll explore books, magazines and other resources and then settle into the Community Room to sample a few products. This informational class is a good first step for someone who is reducing or eliminating wheat and gluten foods.

Fabulous Pies & Tarts

Here is a nuts and bolts class where you'll learn great techniques for making fabulous pies and tarts. It all starts with the crust and Paige will show you how to make three different kinds of crusts, plus some basic components of pies and tarts like crumb topping, pastry cream, and frangipane. Of course, you'll get to taste the results when you sample Paige's Apple Crostata; Double Crust Plum Pie; Pear and Frangipan Tart; and a Patisserie-style Fresh Fruit Tart. We'll put on the tea and coffee.

Family Fun Celebration National Herb Day

Activities will include an herb walk in the Healing Garden, visits with the horses and chickens, playing, hiking, arts and crafts, Healing Touch for families, healthy meals prepared with homegrown organic produce, an overnight camp out (indoors or out) and a pajama breakfast. From its humble beginnings in the annals of Asian myth through its fascinating flavors, and into its place in your kitchen, tea is the second most consumed beverage on Earth, second only to water. The class will guide you through the most consumed and most revered teas in the world and guide you further towards the "Sip by Sip Lifestyle." This is the time to build a stronger immune system for yourself and your family. Herbs can be a powerful aid. Starting to work on your immune system NOW can help you avoid many sick days during the cold weather flu season. Waiting until you are sick to begin trying to strengthen your immune system is like beginning to build a boat as the flood is washing your house away. Ocoee will teach you which herbs to use and how to use them to build a stronger immune system. She will also explain how a few simple lifestyle changes will boost your immunity even more. Tofu Basics 2

If you missed our Tofu Basics class in January, or if you came and want even more ideas, then join us for another fun beginner tofu cooking class. Nancy will demonstrate and the class will sample Tofu Sloppy Joe, Tofu Spaghetti Balls, Spicy Fried Tofu, Gabey Steaks with Miso Gravy and (even though it's not tofu) Tempeh Reubens. Guaranteed fun and safe - you needn't be afraid of tofu! Each class participant will receive a complimentary pound of locally made Central Soyfoods tofu to take home and enjoy!

French Cuisine with Mari

Mari will fill our afternoon with culinary tips and lots of information, as well as feeding us fabulous French cuisine?vegetarian style. Mari will prepare wonderful, fresh Ratatouille (you'll never look at eggplant the same way); Melt-in-Your-Mouth Quiche; Salad Nicoise (prepared without tuna); and made-from-scratch Crepes. Ooo-la-la!

Gluten-Free Throughout the Day

Eating a gluten-free diet can be interesting and delicious. This class will allow you to sample a days worth of gluten-free eating: breakfast, lunch, dinner and snacks. We'll sample several products and prepare a few recipes using healthy substitutes for wheat, barley, rye and oats. We'll also look at the Merc's selection of gluten-free cookbooks and other resources to help you shop and prepare satisfying foods for you and your friends and family.
