Fish Cooking Basics

If you'd like to include more heart healthy fish in your diet come to this class with Chef Paige where you'll build your knowledge, skills and confidence. Paige will prepare (and you'll sample) Salmon Baked with Herb-Anchovy Butter; Bass in Parchment with Tomatoes, Olive & Orange; Grilled Prosciutto-wrapped Scallops with Rosemary; Halibut Poached with Fennel; and Trout with Browned Butter and Almonds. Kababs & Tandooris 101

Entertaining can be a breeze with easy-to-make delicious kababs and tandooris (Indian barbeque). You will taste some authentic and sumptuous appetizers that are low in oil. We will start the evening with hara-kabab (patties of spinach and paneer flavored with herbs and spices) followed by boti-kabab (chicken cubes marinated in spices and yogurt and grilled on skewers), maacher-kabab (lusciously spiced delicate fish cakes), chicken tandoori (succulent chicken pieces marinated in spices and yogurt and grilled/barbecued), and paneer-tandoori (marinated cottage cheese and vegetable cubes grilled to perfection). We will serve luscious mango-lassi (mango-yogurt drink) as the grand finale. Come prepared for some grilling.

Simple Dinners for Small Households (including Just One!)

It's summer and the fresh vegetables are lovely. But do you hesitate to use them because it looks like too much food and too much work for one or a few eaters? In this class we will make two simple dinners using fresh vegetables and whole grains supplemented with prepared items from the deli. You will sample, and take home recipes for White Bean Salad with Sun-Dried Tomato Pesto over Baby Greens; and Tabouli with Hummus and Salad with Fresh Tomatoes. Come hungry.

Herbal Healing Intensive Workshop

Back, after a 3-year absence, this 2-1/2 day, hands-on workshop has been deepened and expanded. It will provide practical knowledge about healing properties of both wild and culinary herbs. You'll return home from this workshop with medicinal recipes, freshly gathered herbs and plants, and plenty of information to help you in your healing journey. This workshop will be held at the beautiful farm of Ocoee and Keith Miller, near Lone Star Lake. The best of Ocoee's 30 years of experience will be packed into one weekend.
