After the Holidays Diet Clean-Up

Now that you have cleaned up all the decorations and leftovers, it's time to clean up your diet. It feels so good to simplify what you eat. Learn some practical daily eating skills to get back on track including SMART (Specific, Measurable, Active, Realistic and Time-bound) goal setting. We'll sample several healthy soothing recipes with Yogi Tea, Miso Soup and Gingered Carrots with Steamed Greens. Make this a New Year's gift you give to yourself.

Glutenfree Throughout the Day

Eating a gluten-free diet can be interesting and delicious. This class will allow you to sample a days worth of gluten-free eating: breakfast, lunch, dinner and snacks. We'll sample several products and prepare a few recipes using healthy substitutes for wheat, barley, rye and oats. We'll also look at the Merc's selection of gluten-free cookbooks and other resources to help you shop and prepare satisfying foods for you and your friends and family.

Wonderful Winter Soups

The weather has turned cold; time to enjoy the warmth of our kitchens with a pot of homemade soup. We can count on Chef Paige to stir up our imaginations with creative and delectable soups. Enjoy a selection of wonderful winter soups: Stracciatella with Orzo & Spinach (an Italian egg drop-like soup); White Bean & Escarole Soup with Prosciutto & Parmesan; Broccoli Cheddar Soup; Caramelized Onion & Barley Soup with Wild Mushrooms; and Cream of Roasted Winter Squash. Yum.

Embracing Change

Are you ready for change but unsure you can handle it? This class will introduce you to dynamic concepts that have proven effective in helping people change. As you learn to improve your thinking, you become more open to possibilities and more capable of acting on them. These strategies will help you move from weakness to strength in your thinking and behavior, from fear to courage and hope. The class is interactive and includes relaxing guided imagery. You will come away with tools for change that will last a lifetime.

Making Your Own Natural
Cleaning Products

Why make your own natural cleaning products? They're good for the Earth. They're less expensive. You'll know exactly what is in your cleaning products. Join us for this introductory class about putting together simple cleaning products and return home with the knowledge to make natural cleaning products for every aspect of your cleaning routine. These are the same product recipes used by Aveena Natural Cleaning Services. They are safe, effective and even edible (although not too tasty, if truth be known).

Flat Breads & Warming Winter
Soups (Dals) from Bengal

Few things can beat the irresistible taste of warm soups and flat bread during the cold winter days. This class will feature Batura - fried soft bread, Chana - spiced chickpea soup, Rooti - chapatti flat bread, with a hearty Lentil soup rich in vegetables and onion, Naan - flatbread with onion stuffing with Cholar Dal - yellow split pea soup with raisins and coconut. Wash it down with Moshla Cha - spiced tea or chai. Vegetarians and non-vegetarians alike will enjoy this class.

Tofu Basics 1

In this beginner tofu cooking class we will demystify tofu by providing basic handling and cooking information that will help you succeed with soy. We'll prepare Simple Pan Fried Tofu, Tofu Sandwich Spread, Marinated Tofu & Rice Salad, Tofu Peasant Pie, and Barbecued Tofu. Each class participant will receive a complimentary pound of locally made Central Soyfoods tofu to take home that you can use to create a tofu success!

The Wonders of Paneer

Come and discover the wonders of Paneer - Indian cheese! We'll start by learning how to make paneer, both plain and flavored. Then we'll move on to discover the versatility of Paneer, ranging from Tandoori Paneer - marinated and roasted, Mattar Paneer - cubed paneer with peas in a spicy gravy, Scrambled Paneer with Vegetables, just to name a few. We'll also explore the use of paneer in Western dishes such as lasagna, pizza, pastries, etc. It's a great way to increase calcium intake.

We're headed to Spain once again with Chef Paige to eat more delectable little Spanish appetizers or tapas. If you loved our first tapas class and want more, or if you missed the first class, start here for an evening of Spanish flavors. Enjoy Chicken Empanadas; Patatas Bravas (fried potatoes with allioli and spicy sauce); Roasted Beef Tenderloin with Cabrales; Catalan-style Spinach; and Cauliflower Gratin with Manchego & Almond Sauce. Wow! Wow!
