Shrimp Delights from Bengal
taught by Debjani Bhaduri
This class will introduce traditional Bengali shrimp preparations prized over generations in my family. You are invited to sample and savor some mouth watering dishes starting with Moshla-Chingri (a shrimp party starter) followed by Chingri-macher Kalia (shrimp cooked in a spicy gravy of onions and potatoes), Bati Chingri (a classic Bengali presentation of shrimp in a unique paste made from mustard seeds), Malai Chingri (a sweet and savory dish of shrimp cooked in coconut milk and flavored with ghee), and Aloo-Badhakopi Chingri (an aromatic course made with fresh cabbage, potatoes, and shrimp). $15 per person, $13 for co-op members & seniors.

Move Over Wheat! Cooking & Baking With Other Fabulous Grains
taught by Mari Ruck
Barley, teff, buckwheat, quinoa, and amaranth are all wonderful grains that provide a delicious and nutritious alternative to wheat. Mari will cook both savory dishes and baked goods that are all wheat-free*. Enjoy Barley Risotto, Tex Mex Buckwheat Casserole, Quinoa & Black Bean Salad, Amaranth Banana Bread and Chocolate Teff Cake. Learn to cook and bake these great grains while enjoying Mari's excellent instruction and fabulous culinary skills. *Recipes prepared will be wheat-free but not all gluten-free. $15 per person, $13 for co-op members & seniors.

Back To School: Healthy Breakfasts & Lunch For The Busy Family
taught by Hilary Kass, Nutrition Educator
Start the day feeling good with a simple and satisfying breakfast like Corn & Blueberry Toaster Cakes, or Fresh Apple Wrap. Then pack some goodness to go such as Tuna Pita Pockets or a Salad in a Jar. Learn several helpful ideas for preparing food to be ready to go on a busy morning. $15 per person, $13 for co-op members & seniors.

The Farmers Market and the Merc Produce department are bursting with beautiful fresh produce. If you're looking for new ideas on how to use the bounty of late summer, join Paige for an evening of culinary inspiration. Paige will prepare Zucchini, Cherry Tomato and Olive Relish; fabulous Ratatouille (we know it's good, we've had it!); Pan-Seared Halibut with Red Pepper, Caper & Lemon Sauce; Tomato Leek Gratin, and for dessert, a Plum Galette! Wow!! $18 per person, $15 for coop members & seniors.

Tofu Basics - Part 2
taught by Nancy O'Connor, Merc Nutrition Education Director
If you missed our Tofu Basics class in January, or if you came and want even more ideas, then join us for another fun beginner tofu cooking class. Nancy will demonstrate and the class will sample Tofu Sloppy Joe, Tofu Spaghetti Balls, Spicy Fried Tofu, Gabey Steaks with Miso Gravy and (even though it's not tofu) Tempeh Reubens. Guaranteed fun and safe - you needn't be afraid of tofu! Each class participant will receive a complimentary pound of locally made Central Soyfoods tofu to take home and enjoy! $15 per person, $13 for co-op members & seniors.
